White Vegetable & Red Bell Pepper Pizza

This delightful vegetarian pizza will become one of your favorites.  Red bell peppers, when roasted release a natural sweetness.


  • 1, 12″ Italian bread shell or Naan bread
  • 1 container (16 oz.) ricotta cheese
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano leaves
  • 2 1/2 cups (2 oz.) fresh spinach
  • 1 package (8 oz.) shredded mozzarella
  • 1/2 cup each, roasted red pepper strips (see preparation)
  • 1/2 cup sliced black olives
  • 1/2 cup grated Parmesan cheese

Preparation for peppers:  Wash peppers well.  Under a broiler, char whole peppers on all sides.  Place blackened peppers in a bowl, cover and let steam twenty minutes.  When cool, peel off the black skin.  Remove seeds.  Cut into narrow strips.

How to make it:

  1. Preheat oven to 450 degrees.
  2. Place bread shell on baking sheet or pizza pan.
  3. In bowl, combine ricotta cheese and garlic. Spread over the shell.
  4. Sprinkle with oregano and spinach.
  5. Top with pepper strips, black olives, mozzarella and Parmesan cheese.
  6. Bake 10 minutes or until cheese melts.  Serves 4.
